Sunday Bunny Brunch

We got together for brunch & an egg hunt. Shane & I have been incorporating a "paleo" nutritional lifestyle and so made some special items to bring with us. I made almond flour pancakes, musceli scones (almond flour, various nuts, dried cranberries & apricots), cocoa & coconut treats (basically unsweetened cocoa powder, honey, various nuts, and unsweetened coconut flakes), and chocolate almond milk for the kids. It's a little time consuming, but oh so worth it. We topped our paleo pancakes with almond butter and it was just delicious. The kids have been learning to enjoy more & more veggies. It's especially nice to hear Isabel ask for more asparagus at dinner time and Lex is loving the mashed cauliflower, too. They're pretty kind at providing the cook compliments even though I know sometimes the recipe didn't turn out that flavorful!

Anyway, here are some pics of the family together. Amy planned all the games for the kids and provided some prizes.

Lex & Isabel both had fun spending a few minutes trying to find their bags.

Grandma V returned from her trip to Germany the night before Easter and gave the kids these special chocolate eggs. Each one has a toy inside that you can assemble. The chocolate is delicious!

St. George Dance Competition

Grandpa and Nana drove up from Vegas to watch Isabel perform at her dance competition in St. George this year.  The event was actually running 15 minutes ahead of schedule & they both got there just a minute or two before her dance. She was so happy they were there to support her. Afterwards, we watched a few more dances and then did a bit of beach-wear shopping and then to lunch.



After the awards ceremony, Shane and the kids had a little dip in the pool at the hotel.

Shane and I met my senior year of high school in 1996 and were married in 2000. It's just crazy to think we've known each other for more than a decade and still learn new things about each other. We both graduated from the University of Utah. I have a degree in Finance and Shane has a degree in Biology. We are both enjoying jobs in our respective fields. Our favorite thing to do is travel. Before we started a family, we spent two weeks in Europe touring Italy, Germany, Switzerland, and France. We want to see the world and hopefully take our children along with us when they are older. Our children are our life. Alexander "Lex" is our little man at 7 years old. He loves to try lots of new things. He's currently enrolled in soccer, tumbling & boys' hip hop. Isabel (or Bel as Shane likes to call her) is 3 1/2 years old. She is also enrolled in tumbling & dance. All in all, life is wonderful and we couldn't be happier.
